Depuis Mai 2015 le chateau de Fontainebleau a reouvert le boudoir turc de la reine Marie Antoinette ou tout n'est que details et ou l'on peut voir la perception française de la Turquie au XVIII siècle.













Since May 2015  the Castel of Fontainebleau has reopened The Turkish boudoir of the queen Marie Antoinette where everything if just about details and where one can see what was the French perception of Turkey in the XVIII century.

cuisine ottomane pleine de saveur / ottoman cuisine full of flavours

C'est grâce a une invitation qu'il m'a été donné de découvrir un excellent restaurant gastronomique de cuisine ottomane proche du Grand Bazar  sur Nurosmaniye.

Le restaurant est sur la terrasse de la boutique Armaggan (www.armaggan.com) qui appartient au même propriétaire et on y retrouve le même degré d'excellence des produits.

Sur les murs sont accrochés des tableaux originaux de célebres artistes turcs dont Fikret Muağla.

İl y  est servi une cuisine legére et épurée ou la nourriture est traitée avec respect sur la base de l'excellence de produits du terroir.
A noter des feuilles de vigne cuisinées dans du jus de griotte qui donnent une nouvelle approche a cette cuisine turque.
il y a une vraie recherche de l'authenticité du gout des produits , chose rare en Turquie.

La cave compte une selection des seuls vins turcs de petites propriétés dont 150 vins rouges et 53 vins blancs.
N'y cherchez pas ni Doluca ni Kavaklidere, ils ne s'y trouvent pas.

 Thanks to an invitation, it has been given to me to discover an excellent fine dining restaurant of ottoman cuisine close to the Grand Bazar on Nurosmaniye.

The restaurant is located on the roof terrasse of the Armaggan shop (www.armaggan.com) that belong to the same owner and where one finds the same degree of excellence.

On the Wall are hanged some original paintings of famous turkish painters such as Fikret Muağla.

The Cuisine served is light and pure, with food transformed in the respect due to excellent terroir prducts.,

A special note to the vine leaves cooked in cherry juice that gives a new approache to this turkish cuisine. There is a real search for authenticity of the taste of the product, which is rare in Turkey.

The cellar offers a selection of just turkish vines from small properties with 150 red vines and 53 White vines.
Don't look after Doluca or Kavaklidere you wont find those there.

A New Comer in Istanbul/ un Nouvel arrivant a Istanbul

 
 
 
 







Since few months the famous french épicier FAUCHON has open in Istanbul Akasya Mall on the asian side.
Enes Şahin (the pastry chef) has managed well to reproduce the production as it is in Paris.
 the only real question is? will it really meet the turkish taste as it is so "french"?
a pistachio éclair done with fake pistachio paste as it is in France and not with the real pistachio as the Antep pistachio taste is representative of this questionning.
roquet high price for the turkish market as well as small sized cakes might kill the business.

Mais une question reste en suspens? cela va t il correspondre au gout turc vu que cela est si "français"?
un eclair pistache fait avec une fausse pate de pistache telle qu'on la trouve en France et non fait avec de la vraie pistache d'Antep est exemplaire de ce questionnement.
Des prix trop elevés pour des portions trop petites pour le marché local risquent de tuer le business.

Vu les evenements qui se passent aujourd'hui en Turquie, a noter une initiative creative a pleine d'humour sur une situation qui n'a rien d'humoristique. On remarquera la sequence de fin avec les pingouins faisant reference a la censure des medias lors des premiers evenements et donc le refrain non moins premonitoire " Doucement Doucement ça glisse". En tout cas la cela commence serieusement a deraper.

Due to the events happening these days in Turkey; to be mentionned the creative initiative full of humour about a situation that isnt at all humouristical. One will notice  the last sequence with pingouins refering to the censure of the medias with documentary about pingouins during first demonstrations and to finish with the moto "Slowly Slowly it is slipery". For sure it is seriously starting to slide off.

Pastel Pastanesi

C'est une vraie bonne surprise stanbouliote que la decouverte que j'ai faite a Bebek denierement d'une patisserie toute jeune mais vraiment avec un vrai respect de la qualité. Ceci est rare a Istanbul et vaut bien d'etre remarqué et encouragé. C'est donc une ancienne disciple de Guislain Gaille qui a monté cette boutique. C'est simple et c'est un melange reussi de style français et du gout turc. Bonne chance!
A real true surprise that I did in Bebek of this new small pastry shop that has a real respect for quality which is a rare thing in Istanbul. It is so rare here that is important to promote it. It is an old colleague of Guislain Gaille (from the Four Seasons) that has open this shop. It is simple and very clean cut and a successfull blend of french style and turkish taste. Good Luck for it !
